Best Breakfast!

Barbee

2 eggs
1 cup milk (can use powdered substitute)
2 cups Bisquick
butter
brown sugar
fruit (apples, bananas, or peaches)
cinnamon or nutmeg (optional)

In a skillet / large frying pan / Dutchoven, melt some butter. Slice your favorite fruit (or substitute with canned), into the skillet and saute for 2 to 4 minutes while you are preparing the pancake mix. Dot the fruit with brownsugar and any spices you desire. Stir together the Bisquick, milk and eggs...it's okay to leave lumps: too much stirring makes for tough batter. Pour the batter over the fruit / spice / sugar mixture, and cover the skillet (if you don't have a cover, use heavy duty aluminum foil). It will cook a little more evenly if you can put a few coals on the top, but it will be fine without it. Cook 7 to 10 minutes until pancake batter on top is done. Invert to serve...it's delicious!
