Northern Fried Rice

1 cup uncooked rice
1 green pepper, fresh or 1/2 cup dehydrated (soaked for 15 minutes and drained)
1 cup finely chopped celery or 1/4 cup dehydrated (soaked for 15 minutes and drained)
1/2 cup chopped onion
1 can mushrooms, or 1 cup fresh, or 1/4 cup dehydrated(soaked and drained)
2 cups water

Brown rice in a heavy iron skillet until golden brown, continue stirring the rice. Add boiling water and 1 tsp salt and continue boiling until the rice is tender. Add remianing ingredients. Boil slowly for 10 minutes. Serve hot. Soya sauce optional on table.
