Split Pea Soup

3 cups split peas
1 carrot, chopped or freeze-dried
1 pkg dried onion soup
1 onion, chopped
1/2 tsp salt
1 tsp parsley
1 Tbsp oil
2 Tbsp soy sauce
12 cups water
2 slices bacon.( optional)

If using bacon, chop and fry. Add onion and oil and sauté. Then add remaining ingredients except soy sauce. Bring to a boil and simmer until tender. Stir in soy sauce and serve. Add more water if necessary during cooking.

Split peas do not have to be presoaked, but if they are they will cook faster.

Leftover grains like rice and bulgur as well as macaroni. spaghetti, noodles, or vegetables can all be saved and used in a soup for lunch the next day. You can get some very interesting and delicious soup combinations.
