Tuna Patties

1 Can tuna
1 medium onion
1/2 tsp salt
1/4 tsp pepper
1/2 tsp parsley
3 medium potatoes, boiled and mashed or substitute instant potatoes
1 Tbsp margarine or butter

Mix potatoes, tuna, onions, salt, pepper, and parsley and make into patties. Fry in margarine until brown on each side and heated right through. Serve with freeze-dried or rehydrated vegetables, salad. Makes a great baked loaf.

Serves 2-4
